SHOCHU

The distilled spirit of Japan, similar to vodka or whiskey in the west but the starch (grain) is converted to sugar using a mold called koji. Koji is the same mold used in making sake, soy sauce, and miso. Koji is the one element that separates shochu from other spirits.
