Provide food, alcoholic and non-alcoholic beverages to guests following company standards of steps of service. Set table and dining area in accordance with hotel standards. Communicate orders, questions and service needs with the servers, bartenders and kitchen staff. Use MICROS computer system to place orders and close out checks. Complete daily opening, closing and/or running side work. For example: stock ice and supplies, wash glassware, cut fruit for garnishes, make drink mixes. The Food & Beverage Manager is responsible for supervising the daily operations of the Pool Bars and developing the performance of the pool team members to ensure the highest levels of luxury service to the guests and team member satisfaction in a cost efficient manner. Supervise the opening and closing of the Pool Bars on a daily basis. Lead daily pre-shift meetings. Represent the Pool bars at weekly management meetings. Provide safe cash handling procedures. Monitor, count and control inventory of equipment and products. Schedule and monitor staffing levels while providing ongoing operation training, including probationary and annual performance reviews. Conduct interviews, hire and supervise training of new employees as necessary. Assist with creating department manuals and procedures, assist with developing menus and guest amenities/daybed programs and any other projects requested. The Food & Beverage Manager will also be responsible for assisting with the daily operations in the other food and beverage outlets as necessary.



  • High School Diploma or equivalent required. Bachelor degree in travel industry management preferred.
  • Minimum 2-3 years prior experience in restaurant management or food and beverage outlets management within a luxury hotel environment required. 1-2 years of Pool Operations experience required.
  • Prior experience with Point of Sales (POS) required.  Micros OS experience preferred.
  • Must possess or be able to obtain State of Hawaii Liquor Commission Manager’s Card.
  • In-depth working knowledge of food and beverage preparation, wine and beverages required.
  • Sound experience in beverage and bar operations to include an in-depth knowledge of service standards required.
