Leads the culinary operations at Morimoto Waikiki and reports directly to the Morimoto Waikiki general manager. Provides support and guidance to the culinary team, ending in a positive guest experience. Assists with managing all aspects of the day-to-day operation of assigned kitchen area. Responsible for assisting with bakery needs in all Modern Honolulu F&B outlets.  Ensure beautiful and superior quality baked goods, appetizers and salads.  Prepare breads and pastries, including preparing dough’s and fillings, proofing, baking, and decorating as appropriate.  Ensure all pastry and cold food preparation and plate presentation is to established specifications while caring enough to do it well by adhering to The Modern Honolulu standards.  Review production sheet to understand variety of baked goods to be produced daily. Prepare and cook according to recipes, food prep checklists, and quality/presentation standards.  Maintain kitchen logs for good safety program compliance.  Keep Chef informed of excess food items for planning of daily specials.   Follow and ensure compliance with good safety handling policies and procedures, including personal hygiene procedures.   Check and ensure correct temperatures of kitchen appliances and food - report issues to management.   Monitor the quality of food prepared and portions served through shift.  Must possess a good command of English with the ability to clearly and pleasantly communicate verbally and written.  



Experience in a 4-5 star hotel culinary program highly desirable.  Prior experience in luxury hotel environment in similar capacity preferred.

A Steward is responsible for the overall cleanliness and sanitation of all Food and Beverage areas, to include Dish Rooms, Main Kitchen, Bake Shop, Food and Beverage Cold and Dry Storage, Poolside Pantries, and Banquet Food Service Areas. A Steward is responsible for the overall cleanliness and remedying of any safety hazards of all Food and Beverage Floors. They must ensure all Food and Beverage Trash is Recycled and disposed of properly. A Steward is held accountable for opening and closing the Team Member Cafeteria, and the stocking and removal of various serving equipment for sanitation and cleanliness.



  • 1-2 years of experience in an independent restaurant culinary operation or food and beverage operation of a hotel required.
  • High school degree or equivalent required.
  • Must speak, read and write clearly in English
  • Must be able to carry/lift up to 60 lbs as necessary, throughout the shift.
  • Must be able to push up to 500 lbs.
  • Must be able to pull a cart that weighs up to 250 lbs.
  • Must be able to work a flexible shift schedule to include AM’s, PM’s, Overnights, weekends, and holidays.
