Director of Restaurants and Bars

Plans and directs the administrative and operational functions of the Hotel operated restaurants and bars. Evaluate and adapt the structure of hotel’s restaurants and bars, jobs, and work processes to best fit the needs and/or support the goals of the Food & Beverage division. Assigns, mentors, and delegates responsibilities and authorities to Food & Beverage management team for the successful and smooth operation of the outlets, i.e. In Room Dining, Pool Service, The Study and ADDICTION. Provides strategic planning, resource allocation, human resources modeling, leadership technique, production methods, and coordination of people and resources. Supports the marketing and social media efforts for the restaurants and bars experiences. 



Position Characteristics:

Proficient in all aspects of F&B operations in hotel environment; restaurants and bars. Knowledge of food and beverage as well as accounting and administration. Proficient in all aspects of cost control. Effective style of management promoting a team atmosphere. Ability to inspire staff to achieve their potential. Basic understanding of food handling and sanitation requirements of the Department of Health. Able to read and understand work related literature. Possess a proven track record for guest satisfaction.

Education and Experience:

High school diploma or equivalent required.

College degree in Food Service Management, Hotel & Restaurant Management, Hospitality, Travel Industry Management, Business Administration or related preferred.

A Steward is responsible for the overall cleanliness and remedying of any safety hazards of all Food and Beverage Floors. They must ensure all Food and Beverage Trash is Recycled and disposed of properly. A Steward is held accountable for opening and closing the Team Member Cafeteria, and the stocking and removal of various serving equipment for sanitation and cleanliness.



  • 1-2 years of experience in an independent restaurant culinary operation or food and beverage operation of a hotel required.
  • High school degree or equivalent required.
  • Must speak, read and write clearly in English
  • Must be able to carry/lift up to 60 lbs as necessary, throughout the shift.
  • Must be able to push up to 500 lbs.
